These are called teasels and we had them all over the place inthe little gutter-gardens beside the roads, when I'd lived in Missouri.
I was td they use to used to dry these and use them to comb-out sheared wool before spinning it into yarn, back in the day...

If there's any nearby: Fireweed, Northern Gooseberry, Prairie Smoke and Wild Lupine
Daucus Carota. The dark red floret at the center of the umbel is very visible. It made identifying these ones easy. They can be forraged for food, but these ones were roadside and likely contaminated with polutants.
